Pizza Margherita

Ingredients - 4x pizza 28cm

Filling:

  • mozzarella – 500 g
  • basil – 20 leaves
  • olive oil – 2 tablespoons

Sauce:

  • garlic – 1 clove
  • olive oil – 3 tablespoons
  • tomatoes – 500 g
  • basil – 5 leaves
  • oregano – 1 teaspoon
  • semolina sugar – 1 teaspoon
  • tomato paste – 2 tablespoons
  • salt, freshly ground
  • pepper – to taste

Dough:

  • wheat flour – 500 g + a little for rolling
  • salt – 10g
  • Papa Baker baker’s dried yeast – 3,5 g (half a bag)
  • sugar – 1 teaspoon
  • drinking water – 300 ml
  • olive oil – 2 tablespoons

Recipe for cooking step by step

Step 1
Prepare the Margherita pizza dough. To do this, sift the flour and salt through a fine sieve into a large bowl.
Step 2
Stir the sugar and then the Papa Baker’s dried yeast in the lukewarm water. Leave for 15-20 minutes to form an active leaven.
Step 3
Pour the resulting mixture into the sifted flour. Add olive oil and knead thoroughly on a food processor with a hook type attachment for 10 minutes on medium speed. Then sprinkle with flour and leave in a warm place for 1 hour.
Step 4
Place the risen pizza dough on a floured surface and knead thoroughly, stretching, twisting and beating. Shape into a ball and leave under a tea towel for a further 15 minutes (preferably in the fridge until the next day).
Step 5
Prepare the Margherita pizza sauce. Peel and crush the garlic with the flat side of a knife. In a large pan, heat the oil.
Step 6
Remove the pan from the stove and add the garlic for 30-60 seconds. Then add the diced tomatoes and let them heat through together. Add the chopped basil, oregano, salt, pepper, sugar and tomato paste and stir. You can leave with the tomato chunks, or you can strain through a sieve.
Step 7
Divide the pizza dough into 4 parts. Roll each part out on a floured table into a thin 28 cm (8 inch) slice. And heat the oven with hot air on high.
Step 8
Transfer the dough slices to the prepared baking sheet with baking paper. Slice the mozzarella into thin rounds.
Step 9
Spread the sauce on the dough sheets and slice the mozzarella into thin rounds. Bake for 10-15 minutes.
Step 10
Sprinkle the baked pizzas with basil leaves, drizzle with olive oil and serve.
